Winter Salad

Oh I have to start taking pictures of the food again! I am so bad about that! Lazy? Perhaps. More likely just forgetful. I made a very pretty and delicious salad for dinner last night. We had a family dinner with my parents, sister and brother and law and of course, my kids and husband. We started with this lovely salad then we did make your own pizzas. I put out naan bread for the crust, roasted butternut squash cubes, chard, caramelized onions, sauteed vegan sausage, a few different types of cheese, apple slices, tomato sauce and hummus. Everyone assembled their own pizzas and then we ate together when they came out of the oven. It was fun and it took some of the pressure off of me to prepare a big meal.

Here is what went into the salad:

3 steamed beets, cut into thin wedges
4 blood oranges, supremed
large handful of small, briny black olives (Nicoise olives would be good here too)
1/4 cup crumbled sheep's milk feta
2 heads of butter lettuce, torn into small pieces
dressing made from 2 parts olive oil, 1 part sherry vinegar
salt and pepper to taste

It was a big hit and with all of the beautifully colored beets, blood oranges and black olives it really was pretty.
