Big News and a New Series

Let's just get to it. The big news. I am pregnant. This will be baby number four, and it will be our last one. I have always wanted four kids. I feel so lucky to be getting my wish! Wish me luck!

This pregnancy is challenging my vegetarian lifestyle a lot. I have been having crazy cravings for meat. I haven't succumbed so far but it is hard! Perhaps I just need to eat more protein, but the usual vegetarian protein sources do not appeal to me at all. The thought of tofu is hard to bear. Instead it is pate and sausage that I am dreaming of. Of course, the reality is that I do not want to support the meat industry which is why I have not given in. But really, it is a challenge. Those of you out there who have been pregnant know how strong those cravings can be.

Years and years ago, right after college I moved to Hawaii. I ended up staying there for five years, during which time I lived with a local family. I discovered some wonderful foods there, most of them meat based, many of which I have been craving during this here pregnancy. So, I thought it would be fun to do a little series on the blog of veganized Hawaiian dishes. A few of the foods that I am missing these days are:

Chicken Long Rice
Kalua Pig and Cabbage
Kal Bi Plate Lunch
Poke

I am sure others will come to mind but this will be the beginning. This week I will get to work on the Chicken Long Rice and will post my veganized version next week. This will be challenging but fun and hopefully ultimately satisfying!
